PERFECT PANI PURI FROM SCRATCH/CRISPY GOLGAPPA PURI RECIPE

THE PERFECT PANI PURI | COMPLETE PANI PURI RECIPE FROM SCRATCH
A complete homemade pani puri made entirely from scratch — from the crispy puris and chilled mint pani to the meetha chutney, potato & channa masala, and savoury boondi.
Once you make these crispy puris at home, you’ll understand why homemade pani puri is such a different experience! 🤎
🌿 MINT PANI
Ingredients
Pudina (mint leaves) – 2 cups
Coriander leaves – 1 cup
Ginger – 1 inch
Green chillies – 2–3
Lemon juice – 1 tbsp
Tamarind paste (imli) – 1 tbsp
Jaggery (vellam) – 2 tbsp
Pani puri masala – 2 tsp
Roasted cumin powder (jeera) – 1 tbsp
Salt – to taste
Ice cubes – 1 cup
Water – 500 ml
Method
Add all the ingredients to a blender and grind well. Add the water gradually while blending.
Strain the mixture well. Taste and adjust the salt if needed. Add more ice if you prefer it extra chilled.
Refrigerate until ready to serve.

🤎 MEETHA CHUTNEY
Ingredients
Deseeded dates (khajur) – 1 cup / 150 g
Deseeded tamarind (imli) – 2–3 tbsp / 50 g
Grated jaggery (gur) – ½ cup / 75 g
Red chilli powder – ½ tsp
Roasted cumin powder (jeera) – 1 tsp
Salt – to taste
Water – 300–350 ml
Method
Soak the dates and tamarind in water for 30 minutes.
Drain and remove any remaining seeds.
Add the soaked dates, tamarind, jaggery, chilli powder, cumin powder, salt and water to a pan.
Cook for about 30 minutes, or until the mixture thickens and the liquid reduces by about half.
Allow it to cool completely, then blend and strain well.
Keep aside until ready to serve.
Storage tip: Make a larger batch of this sweet chutney and store it in the refrigerator. It can be kept for up to a month when stored properly in a clean, airtight container.

🥔 POTATO & CHANNA MASALA
Ingredients
Potatoes – 3 / 200 g
Channa (chickpeas) – 50–100 g
Onion, finely chopped – 1
Green chillies – 1–2, finely chopped
Coriander leaves – a little, chopped
Salt – to taste
Roasted cumin powder (jeera) – 1 tsp
Chilli powder – ½ tsp
Chaat masala – 1 tsp (optional)
Method
Boil the potatoes and channa until cooked.
Peel and mash the potatoes. Add the cooked channa and all the remaining ingredients.
Mix well, lightly mashing the potatoes and channa together.
Keep aside until ready to serve.

🫓 CRISPY PANI PURI POORIS
Ingredients
Rava (sooji/semolina) – 1 cup
Atta (whole wheat flour) – 1 cup
Salt – to taste
Water – as needed
Method
Mix the rava, atta and salt well.
Gradually add water and knead into a firm, smooth dough. Knead well for about 10 minutes.
Cover with a damp cloth and let the dough rest for 30 minutes.
After resting, knead the dough again.
Keep the dough covered with a damp cloth so it does not dry out.
Divide the dough and roll it out very thinly and evenly.
Using a small round cutter or a suitable cap, cut out small circles.
Place the cut puris in a bowl or tray and allow them to rest for about 1 hour before frying.
⭐ Important Tip for Crispy, Puffy Puris
Do not skip the resting time. Allowing the cut puris to rest before frying helps them puff up beautifully.
You can also prepare the puris in advance, cover them well and refrigerate them to fry the next day.
When frying, use a spider-web ladle (spider strainer) to gently press and flip the puris in the hot oil.
This is an important tip: I found that using a normal perforated ladle with holes does not give the same result and the puris may not puff properly. The spider-web ladle works much better for pressing and flipping them while frying.
Deep-fry the puris in hot oil until they puff up and turn crisp and golden brown.
When made correctly, these homemade puris can stay crispy for hours.

🌿 ASSEMBLING THE PANI PURI
Make a small hole in each crispy puri.
Fill with the potato & channa masala.
Add the meetha chutney.
Top with savoury boondi.
Finally, dip the pani puri generously into the chilled mint pani.
