One of Scotland’s finest chefs, Dean Banks was first famed for his Michelin-starred restaurant at the Pompadour in Edinburgh. But now, at the height of his culinary game, the Angus-born chef has made St Andrews his home, opening the award-winning Haar on 1 Golf Place, the seafood restaurant Dune, and now Amber.
