Over the past 7–8 years, the traditional clay-stove beef cooking culture in Uttara, Dhaka, has grown tremendously. Ayonal was one of the pioneers who started this food trend, but today, several popular restaurants such as Bismillah, Al Amin, Aizan, and many others have joined the scene. These restaurants are famous for their traditional Bengali beef dishes, including Beef Kala Bhuna, Beef Lal Bhuna, Nalli (bone marrow), and a wide variety of traditional bhortas, bhajis, and other local delicacies. Today, we are heading to Aizan Hotel, located beside Zam Zam Tower in Uttara, to explore their famous traditional beef dishes. One of the most interesting aspects of these restaurants is their cooking technique. Most of the well-known beef restaurants in Uttara prepare their meat in traditional clay ovens or over wood-fired stoves. The beef is slow-cooked for hours, allowing the spices to blend perfectly into the meat while keeping it tender, juicy, and incredibly flavourful.
