#pachadi or #pavakka #Kichadi, also known as Bitter Gourd Kichadi, is a traditional South Indian dish that combines bitter gourd (pavakka) with yogurt/curd and coconut. Despite the bitterness of the main ingredient, the combination of flavors in this dish creates a delicious and balanced taste. Similar to pavakka theeyal, pavakka thoran, pavakka pachadi, pavakka upperi, pavakka mezhukkupuratti this pavakka curry is also very healthy and tasty. Here's a simple recipe to make Pavakka Kichadi: Ingredients: 1 medium-sized bitter gourds (pavakka) 1 cup plain yogurt (curd) 1/2 cup grated coconut 2 or 3 teaspoon mustard seeds 2-3 dried red chilies (adjust to your spice preference) 1 sprig curry leaves 1/4 teaspoon turmeric powder 1 tablespoon coconut oil or any cooking oil Salt to taste Instructions: Preparing the Bitter Gourd: Wash the bitter gourds thoroughly and trim the ends. Cut the bitter gourds lengthwise and remove the seeds and pith with a spoon. Slice the bitter gourd into thin, semi-circular pieces. Reducing Bitterness (optional): To reduce the bitterness of the bitter gourd, you can soak the sliced pieces in a bowl of water with a little salt for about 15-20 minutes. Then, rinse the bitter gourd well and squeeze out the excess water. This step is optional and can be skipped if you prefer the bitter taste. Cooking the Bitter Gourd: Heat 1 tablespoon of coconut oil or any cooking oil in a pan over medium heat. Add the sliced bitter gourd and fry them until they become tender and slightly browned. This may take about 10-15 minutes. Set them aside. Preparing the Coconut Paste: In a blender or food processor, blend the grated coconut with a little water to form a smooth paste. Mixing the Kichadi: In a mixing bowl, beat the yogurt (curd) until smooth. Add the cooked bitter gourd, coconut paste, turmeric powder, and salt to the yogurt. Mix everything well to combine. Tempering: In a small pan, heat a little more coconut oil. Add mustard seeds to the hot oil and let them splutter. Then, add a few curry leaves and fry for a few seconds until they become crisp. Final Step: Pour the tempered oil mixture over the yogurt-bitter gourd mixture and give it a gentle stir. Your Pavakka Kichadi is now ready to be served! It makes a fantastic accompaniment to rice, roti, or any South Indian meal. Enjoy the unique flavors of this dish, where the slight bitterness of the gourd is beautifully balanced with the creamy yogurt and coconut. In traditional Kerala sadya kichadi is served along with ethakka upperi (banana chips), sharkkara varatti (jaggery banana chips), pazham, pappadam, managa curry/achar (mango pickle), naranga curry/achar (lemon pickle), inchi curry/puliyinji (ginger pickle), olan, pineapple pachadi (madhura curry), cabbage/payar thoran, koottu curry, ethakka kaalan/pulissery (banana yogurt/moru curry), aviyal, sambar, parippu (dal / daal curry) and other dessert like paalpaayasam/ada prathaman/parippu paayasam / gothumb paaysam/ ari paaysam.
