AUTUMN DAYS | pumpkin patch, fall bake off, & cooking a cozy soup

It was a sweet fall weekend full of pumpkin patch dates, garden additions, & baking for an autumn bake off. Soup recipe 🍜 Ingredients: 1 tbsp. olive oil 1 yellow onion, diced 4 cloves of garlic, minced 2 sweet potato, diced 1 bunch of kale, chopped 1 tsp dried thyme 1 tsp dried oregano 4 cups broth 4 cups water Salt, black pepper, & red pepper to taste 9 oz package of pre-made tortellini (feel free to substitute with your favorite short pasta variety) Directions: 1. Heat olive oil in a large pot over medium high heat. 2. Add onion & sauté for 5 minutes. Add in the thyme, oregano & salt/pepper to taste. Sauté for an additional 2 minutes while stirring so spices are evenly distributed. 3. Add sweet potato to the pot with 1/2 cup of water. Cover the pot and let steam for 5 minutes. 4. Uncover then add water & vegetable Broth. Stir well & bring to a boil over high heat. Once boiling, reduce the heat to medium-low simmer for 15 minutes. 5. Bring back to boil. Add the kale & pasta to the pot. Stir & cook for an additional 3-5 minutes. Serve & enjoy! LET’S BE FRIENDS!
