🙏 Lakshmi Charu Recipe in Telugu | Traditional Andhra Lakshmi Charu | Stories from Amma’s Kitchen Welcome to Stories from Amma’s Kitchen – Authentic Home Cooking!❤️ Today, Amma shares a special traditional Andhra recipe, Lakshmi Charu (లక్ష్మీ చారు). This unique preparation uses rice-wash water and rice starch water (ganji), along with fresh vegetables and a flavorful garlic tempering. The traditional preparation takes five days, and the charu is cooked on the sixth day. 🥣 *INGREDIENTS* *For the traditional preparation:* Second wash rice water (not the first wash) Cooled rice starch water (ganji) from cooked rice *Vegetables:* 1 brinjal (eggplant) 7 okra (bendakaya) ½ bottle gourd (anapakaya) A small bunch of amaranth leaves (thotakura) 1 onion 2 tomatoes 1 drumstick (munagakaya) 4–5 green chillies Fresh coriander leaves *Spices and seasonings:* 1 tsp turmeric powder ½ tsp chilli powder Salt to taste *For tempering (tadka):* 2 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds 2 dried red chillies, chopped 8 garlic cloves, crushed Curry leaves 👩‍🍳 *PREPARATION PROCESS — DAYS 1 TO 5* *Step 1:* Take a clean earthen pot. Traditionally, the pot is prepared by applying turmeric and decorating it with dots as a mark of reverence to Lakshmi Devi. *Step 2:* Add the second wash of rice water and the cooled rice starch water (ganji) to the pot. *Step 3:* Repeat the traditional addition of these liquids over the next five days, keeping the pot in one place without disturbing it. 🍲 *COOKING PROCESS — DAY 6* *Step 4:* On the sixth day, remove some of the water from the top. Carefully filter the remaining liquid and residue as described in the traditional method. Use the filtered liquid to prepare the charu. *Step 5:* Pour the filtered liquid into a cooking pot. *Step 6:* Wash and chop all the vegetables. Add the drumstick, bottle gourd, okra, tomatoes, slit green chillies, amaranth leaves, onion, coriander and brinjal to the pot. *Step 7:* Add turmeric powder, chilli powder and salt. Mix everything well. *Step 8:* Cook over a medium flame for about 20 minutes, stirring every 5 minutes so the vegetables cook evenly. *Step 9:* Once the charu starts boiling, add 3–4 curry leaf stems. Continue cooking until the vegetables are tender. *Step 10:* Taste and adjust the salt if needed. 🧄 *TEMPERING PROCESS* *Step 11:* Heat 2 tablespoons of oil in a small pan. *Step 12:* Add mustard seeds and cumin seeds. Let them splutter. *Step 13:* Add the chopped dried red chillies, crushed garlic and curry leaves. *Step 14:* Fry until the garlic changes colour and releases its aroma. *Step 15:* Pour the prepared tempering into the cooked Lakshmi Charu and mix well. ❤️ *SERVING SUGGESTION* Serve hot Lakshmi Charu with steamed rice and crispy papad for a traditional Andhra-style meal. 🌿 *A NOTE ON HEALTH AND FOOD SAFETY* The vegetables provide dietary fibre and various nutrients. However, specific health benefits of this exact recipe have not been scientifically established. Fermenting rice water at room temperature for five days can be unsafe, and smell or appearance alone cannot confirm safety. Use a validated food-safe preparation method.
