MASTER COOKBOOK RECIPE 390 DOUBLE DIP FRIED FISH
Ingredients:
1 cup self-rising flour
1 tsp onion powder
1/2 tsp garlic powder
1 tsp seafood seasoning
1/2 tsp salt
1 cup carbonated beverage
Mix the above ingredients with a wire whisk. Batter should be thin. Set batter aside.

2 cups self-rising cornmeal mix
Instructions:
Pat fish dry with a paper towel. Dip fish into batter and place into the cornmeal. Press the cornmeal onto the fish so it adheres well. Try not to push it or the liquid batter will slide off the fish. Batter should sit on the fish around 10 minutes before frying for a good solid crust. Preheat a skillet with 1" oil. Put a little bit of batter into skillet and once it sizzles and floats the oil is ready. Keep oil at a medium temperature. Place battered fish in the skillet carefully with tongs or meat hook. Turn in two minutes and cook on the other side for another 2 minutes.
The batter will be golden. Put fish on a plate lined with paper towels.
