Try this delicious Smoky Paneer Tikka recipe that's soft , juicy, flavorful and packed with that irresistible smoky aroma ! In this video I will show you some small but important tips and tricks to make paneer tikka perfectly every time without making the paneer hard or dry. The combination of marinated paneer , colorful vegetables, creamy marinade and smoky flavor maked this a perfect starter , party snack, evening snacks or vegetarian appetizer. In this recipe you will learn :- ➡️ How to make flavorful paneer tikka marinade. ➡️ How to get beautiful charred marks ➡️ Tips for keeping Paneer soft and juicy. In a bowl add hung curd 1 cup or approximately 250 grams. In it now goes heated mustard oil 2 tbsp. Add it slowly so it doesn't become gravy consistency. Now roast the gram flour or Besan till rawness goes away and add 4 tsp of the flour. Mix it well. Now add 1 to 2 tsp leaves or powder of kasuri methi or dried Fenugreek leaves. Now we will add paste of ginger, garlic and green chilli. For this I have taken 2 to 3 green chillies. 4 to 5 garliccloves and 1 inch ginger. Mix everything together in a blender. Add salt to taste and kashmiri red chilli powder. Mix it nicely and finally add Carom seeds or ajwain. Crush the ajwain in your hands and add it in the mixture. Cut the vegetables like Red Capsicum, Yellow and Green Capsicum along with 1 onion in bell shapes. Cut the paneer or cottage cheese in cubes. I have taken 400 gms of paneer. Now mix all the vegetables and paneer in the bowl with the hung curd mixture and mix it nicely. Now heat the charcoal and heat it. Now put this charcoal in a small bowl or earthen lamp(diya). Pour ghee 1 tsp on it and cover it with a lid. Let the smoke spread in this bowl. Put the vegetables and paneer in a skewer by keeping little distance. If you have wooden skewers then first place the skewers in a jug filled with water so the skewers become wet and doesn't burn when you put it on fire. You can either place the skewers directly on flame or put the stand on gas and then place the skewers. Turn the sides slowly and let the paneer and veggies get the bits of charred on them. Serve it hot with green chutney, some onion rings and lemon wedges. Or if you wish you can squeeze the lemon juice on tikka and then serve it hot.
