You'll learn the little spoonful of instant coffee that takes the pork smell away, why you should never fry ribs, the "sweet first, salty after" rule for the marinade, the Asian pear that makes the meat so tender, when to add the radish so it never turns to mush, and the cold-water secret, pitmul ppaegi, that Korean grandmothers have used for generations to make ribs that are clean-tasting and glossy and fall right off the bone.
