Banoffee Ice Cream with Buttery Salted Oat Crunch | Recipe

INGREDIENT AND RECIPE For a 1L container (ice cream tub) Brown Butter Banana Jam 18g | 1¼ tbsp unsalted butter 250g | 1 cup peeled ripe bananas 30–40g | 2½–3 tbsp light brown sugar 2g | ½ tsp vanilla extract A pinch of salt Dice 90g banana into 3mm pieces and thinly slice the rest. Brown butter, add sliced banana and mash. Add brown sugar, vanilla and salt, then reduce until thick. Stir in diced banana and cook 1–2 min. Cool. Caramel Ripple 75g | ⅓ cup + 1 tbsp caster sugar 60g | ¼ cup warm heavy cream 18g | 1¼ tbsp unsalted butter A pinch of salt Melt sugar until amber. Add warm cream and cook until slightly thickened. Stir in butter and salt. Cool. Creamy Vanilla Ice Cream Base 500g | 2 cups + 1 tbsp heavy cream 160g | ½ cup + 1 tbsp sweetened condensed milk 3g | ¾ tsp vanilla extract or paste A pinch of salt Whip everything to a soft peak, keeping it smooth and slightly flowing(about 60% whipped) Assemble Layer ice cream base, brown butter banana jam, caramel ripple in a freezer safe container. Gently swirl with a skewer. Freeze 8 hours or overnight. Buttery Salted Oat Crunch 100g | 1¼ cups rolled oats 50g | ⅓ cup + 1 tbsp cake flour 64g | ¼ cup + 1 tbsp unsalted butter 44g | 3½ tbsp light brown sugar 2g | ⅓ tsp salt 1g | ½ tsp vanilla extract Mix all ingredients and spread on a lined tray. Bake at 170°C / 338°F for 15–18 min, Stir once halfway through baking for even browning. Cool. Serve Add oat crunch to the bottom of an ice cream cup. Top with Banoffee Ice Cream and finish with cinnamon and more oat crunch. Be careful not to over-reduce the caramel. The banana jam and caramel are denser than the ice cream base, so they may sink to the bottom. Gently fold from the bottom up to distribute evenly.
