One of the most interesting features of Urgut bazaar, where one can witness firsthand the preparation of the famous chup- chuck lepeshkas- tasty and fragrant, with a long history.
Bread is treated with great reverence and favor. The mastery of the preparation of lepeshkas is famous throughout the world. And who ever tries them will remember this wonderful taste and aroma forever.
Bread…. Is there another such universal product on our planet as bread? Probably not. Bread never gets boring and always gives us strength. The aroma of well-baked bread attracts you even after lunch. Bread is even compared to a deity. Mullahs in the old days said: “The Koran is a holy book, but you can step on the Koran if you need to reach a crumb of bread.” Samarkand flatbreads with baked poppy seeds are especially famous. They claim that they are the best on earth. In any case, the art of baking them originated here in ancient times; even during excavations of the famous settlement of Afrasiab, archaeologists found tandoors that were used by fire worshipers.
There are still tandoors in many Uzbek courtyards. The taste of their flatbreads is special. They say that in ancient times, having heard a lot about the special taste of Samarkand flatbreads, the emir ordered a tandoor maker to be brought from Samarkand to “blessed Bukhara." And it was as if the master took with him not only flour and firewood but even salt and water. The result was a flatbread of amazing taste. But the subtle connoisseur of oriental cuisine tried it and winced: “Not that!” The master faced the death penalty. But the emir still asked the flatbread maker, “You brought flour, firewood, and even water with you; why didn’t the flatbread turn out?” The old master smiled. “The air here is not Samarkand,” he answered, calmly looking into the bishop’s eyes. And, amazed by such an answer, the emir released the old master to his homeland...
There are special flatbreads in Samarkand. They are distinguished by their large size and original decorative decoration. This is a “long-lived flatbread”; it not only decorates the holiday table but is given as a souvenir, and it is stored for a very long time without losing its taste.
When you break a flatbread, you feel as if you are touching the history of our ancient city because the recipes for making it have been created for centuries. It is difficult to count all the varieties of Samarkand flatbreads; they were baked according to a special recipe in each region. These are: patyr, obi-non tunuk, kulcha, katlama, chap-chak, etc.
In ancient times, warriors took small round cakes with them on campaigns. It was "screen-dried." The flatbreads were baked in a tandoor, four at a time, so that there was a hole in the middle between them. Then they “dried with a screen,” as if the clusters were strung on a rope and girded around themselves in the manner of today’s bandoliers. These small, round breads and spring water supported the strength of warriors on multi-day campaigns. Some wise man remarked long ago: “Man cannot live by bread alone.” It's right. How true it is that there is no life on earth without bread!
With respect for bread begins respect for work. This is where kindness and justice originate. A flatbread—a small golden circle of baked bread—is part of our work, our existence, and our being. And every time you pick up a Samarkand flatbread, you must give it respect and honor; it deserves it.
