There's a salt that sells for $100 for a jar you could close your hand around. It isn't ancient, it isn't rare, and it doesn't come from some untouched ocean. It's ordinary sea salt — set on fire nine separate times. Eight salts ranked, with the history, the chemistry, and the facts nobody mentions at the store.
Spotlight Moments:
Iodized table salt is the only salt on this list with a public health program hidden inside it — a 1924 decision by one Michigan pediatrician to add one hundredth of one percent iodine cut goiter rates by as much as 90 percent within 11 years, with no law requiring anyone to do it
Fleur de sel can only be harvested on dry afternoons with the right wind; a cold, wet summer means no fleur de sel that year at all, making it the only salt here entirely at the mercy of weather
Saharan slab salt from the Taghaza mines was exchanged in some markets at close to weight for weight against gold — in 1352, Ibn Battuta documented that the houses and mosque there were built entirely out of salt blocks, roofed with camel skins
Kala namak, black salt, smells of rotten eggs because hydrogen sulfide is driven into the crystal during firing — the taste is nothing like the smell threatens, and a pinch of it is what makes a tofu scramble taste convincingly of eggs
Pink Himalayan salt does not come from the Himalayas; almost all of it is mined at the Khewra Salt Mine in Punjab, Pakistan, roughly 300 kilometers from the actual range, from a deposit approximately 250 million years old
Korean bamboo salt is packed into three-year-old bamboo, fired at close to 800 degrees Celsius, ground, repacked, and fired again — nine times, with the ninth firing hot enough to melt the salt into a liquid that cools into rock and is broken up by hand
