The BEST Bakery Style Aloo Puff Patties Recipe | Super Crispy, Flaky & Homemade From Scratch
Golden, crispy and perfectly flaky bakery-style aloo puff patties filled with a deliciously spiced potato filling. Made completely from scratch with homemade flaky layers, these patties are light, crunchy, and packed with authentic bakery-style flavors. Fried until beautifully golden for that irresistible crispy finish.
This is my homemade version of one of the most loved bakery snacks. Every step has been carefully explained to help you create perfectly flaky layers and a flavorful potato filling while keeping the recipe simple enough to make at home.

Ingredients
Dough
375g (3 cups) all-purpose flour
6g (1 tsp) salt
4g (1 tsp) sugar (optional)
45ml (3 tbsp) oil
190–220ml (¾–1 cup) water
Flaky Slurry
70g (5 tbsp) melted ghee
35–40g (4 tbsp) cornflour
Potato Filling
550g (4 cups) boiled & mashed potatoes
30ml (2 tbsp) cooking oil
130g (1 cup) onion, finely chopped
2–3 green chillies, finely chopped
15g (1 tbsp) fresh ginger, finely chopped
1 tsp cumin seeds
Seasonings
¼ tsp turmeric powder
1 tsp red chilli powder
1½ tsp coriander powder
1 tsp cumin powder
½ tsp roasted cumin powder
½ tsp red chilli flakes
½ tsp garam masala
1 tsp amchur powder
½ tsp chaat masala
Salt to taste
¼ cup fresh coriander, chopped
For Shaping
35–40g potato filling for each patty
Water for sealing
Frying
Oil for deep frying
Tips
• Let the potato filling cool completely before shaping the patties.
• Keep the dough chilled after creating layers for the best flaky texture.
• Seal the edges properly to prevent the filling from opening while frying.
• Fry on medium-low heat for evenly golden and crispy layers.
• Avoid high heat, as the outside will brown before the layers become crisp.
Make Ahead & Freezing Instructions
Prepared puff pastry sheets can be frozen for up to 3 months.
When ready to use, thaw the sheets in the refrigerator, shape the puff patties, and fry until golden and crispy.
Baking Option
You can also bake these patties.
Bake in a preheated oven at 200°C (390°F) for 20–25 minutes or until golden and crispy.
