Keeranur Biryani is a distinct, highly aromatic regional variety of Tamil Nadu-style biryani originating from the Keeranur region. Unlike the long-grained Basmati biryanis of Northern India, it is defined by its use of Seeraga Samba rice—a small, fragrant, short-grain rice—and a heavy reliance on a freshly ground, robust paste of raw spices and aromatics.
Key Characteristics
• The Rice: It is strictly prepared using Seeraga Samba rice (also known as Jeera Samba), which absorbs the juices of the meat and spices heavily without breaking or becoming mushy.
• The Masala: The base relies on a specialized, freshly ground spice paste containing whole green chilies, mint, coriander, and raw warm spices like cinnamon, cloves, cardamom, fennel, and mace. This gives the biryani its signature earthy flavor and a higher, punchier spice profile compared to milder variants like Thalassery or Ambur biryani.
• Cooking Method: It is cooked traditionally using a Pakki method (where the meat and aromatics are sautéed into a rich gravy base before the rice is added) and finished using a woodfire "dum" technique to slow-steam the components together.
While famously served as a specialty dish in wedding catering and standalone traditional eateries across Tamil Nadu and neighboring parts of Kerala, it has also grown in commercial popularity as a branded style of restaurant cooking.
