Vegan BBQ RibsJackfruit... These ribs are made with Jackfruit. Jackfruit comes from the Jackfruit tree and is grown is tropical parts of India and Southeast Asia. Jackfruit has a subtle sweet flavor and can be eaten in a variety of ways. Jackfruit is quite healthy. It provides a moderate amount of calories in addition to lots of fiber, vitamins, minerals and antioxidants. You can purchase the whole Jackfruit or buy it already peeled and chopped in brine. This recipe uses the unsweetened Jackfruit. Recipe.... Prepare the Jackfruit. In a skillet add a 7.9 ounce can of drained Jackfruit. Add `1/4 cup of your favorite BBQ sauce and 1/3 cup of water. Cover the skillet and put it over a medium flame. Mash the large pieces with a fork, you want the solid pieces to cook down into a stringy texture. Ingredients... Dry Ingredients... 1 1/4 Vital Wheat Gluten 3 TBS Nutritional Yeast Spices.... 1-2 TBS SMOKED Paprika (this adds a smokey flavor) 1 TBS Onion powder 1 tsp of garlic powder1 tsp of smoked salt. I used the Penzy's spice in my recipe. If you don't have any smoked salt, feel free to use a tsp of liquid smoke. Wet Ingredients... 3/4 cup of water 2 TBS of Soy Sauce or Coconut Aminos. I used half and half. I like the sweetness of the Coconut Aminos. 1 TBS olive oil 1 TBS of BBQ sauce Directions.... Let the Jackfruit mixture cool while you assemble the wet and dry ingredients. In a bowl, add in the dry ingredients and spices. To that add the wet ingredients and the cooled Jackfruit mixture. Mix with a spoon or I find my hands work better. Mix/Knead until all the ingredients are combined. Let rest for 5 minutes while you prepare an 9x9 baking pan. Spray the baking pan with oil. Add the Rib Dough to the pan, pressing it evenly over the bottom. Heat your oven to 350 degrees. Place the Rib mixture in the oven and bake for 30 minutes. When it is done, take it out and cut it down the middle. Spread each half with 1/4 cup of BBQ sauce. Flip each half over and spread the rest of the BBQ sauce over them. Put the Ribs back in the oven to bake another 35 minutes. When it is done, cut the ribs in slabs about 1 1/2 inches thick. At this point you can wrap them up and put them in the refrigerator. Letting them sit a day improves the texture even more. If you are going to eat them immediately, lightly brush the ribs with a bit more BBQ sauce and serve with more sauce for those that just like things very saucy!
