Another spread puts 'made with real yogurt' front and center, even though water and soybean oil come before the yogurt. And one bargain tub contains so little oil that it does not even come close to the legal standard for butter. Here is why that matters. In the United States, real butter has a surprisingly simple definition. It has to come from milk or cream, and it has to contain at least eighty percent milk fat. So when you walk into the dairy aisle and see twenty yellow tubs, sticks, boxes, words like buttery, churned, original, light, creamy, and country fresh, they may look like versions of the same food. They are not. Some are genuine butter. Some are blends of butter and oil. Some are vegetable-oil spreads. And some are mostly designed to give you butter-like flavor and texture at a lower calorie count or a lower price. None of that automatically makes a product dangerous. But if you think you are buying something close to butter, you deserve to know what you are actually paying for.
