Ingredients
Vegetable Base:
Potato: 1 cup (finely diced)
Cauliflower: 1 cup (finely chopped)
Spinach (Palak): ½ cup (chopped)
Fresh Methi (Fenugreek Leaves): ¾ cup (chopped)
Aromatics & Flours:
Ginger, Garlic & Green Chilli Paste: 1 tsp (crushed)
Gram Flour (Besan): 1 cup
Rice Flour: ½ cup
Spices & Seasoning:
Turmeric Powder: 1 tsp total (divided: ½ tsp for the veggie mix, ½ tsp added with flours)
Salt: To taste (added in two stages)
Red Chilli Powder: ½ tsp
Cumin Seeds (Jeera): ½ tsp
Carom Seeds (Ajwain): ½ tsp
For Frying:
Cooking Oil: As needed for deep frying
Instructions
Season the Veggies:
In a large mixing bowl, combine 1 cup diced potatoes, 1 cup chopped cauliflower, salt to taste, and ½ tsp turmeric powder.
Mix well using your hand so the spices coat the vegetables and draw out their natural moisture.
Prepare the Pakoda Mixture:
To the seasoned vegetables, add 1 tsp crushed ginger-garlic-green chilli paste, ½ cup chopped spinach, 1 cup gram flour (besan), and ½ cup rice flour.
Season with a bit more salt (to taste), ½ tsp turmeric powder, ½ tsp red chilli powder, ½ tsp cumin seeds, ½ tsp carom seeds (ajwain), and ¾ cup fresh chopped methi leaves.
Mix everything thoroughly by hand without adding any water, squeezing gently until a thick, cohesive batter binds the vegetables.
Fry the Pakodas:
Heat oil in a deep pan or kadai over medium flame.
Once hot, drop small, bite-sized portions of the mixture into the oil.
Fry on medium heat, turning occasionally, until the pakodas turn golden brown and crisp on all sides.
Drain & Serve:
Remove the fried pakodas using a slotted skimmer and drain them on paper towels.
Repeat the frying process with the remaining mixture.
Serve hot with tomato ketchup or green chutney.
