Friends, moment tomato prices spike, your home kitchen or cloud kitchen budget takes a serious hit. And market-bought puree is full of expensive chemicals and preservatives.
Today, both these problems end permanently. We'll make 100% natural, zero-preservative, commercial-style Tomato Puree — in two different variants.
Variant 1: Direct Grinding Puree for daily cooking and quick Chop Masala (reduces cooking time by 70%).
Variant 2: Blanch & Strain Silky Smooth Puree for Makhni Gravy, Pasta, Soup, and premium dishes
Plus storage science, oil-seal preservation method, ice cube freezer system, and live demos.
✅ What You'll Learn:
✓ Tomato selection — 100% hybrid/Bombay tomatoes only (more pulp, less water, better colour, longer shelf life)
✓ Variant 1 — Direct Grinding: rough chop → blend without water → 40ml oil tadka (preservation + gloss) → high flame with salt + 30ml vinegar → reduce 20–25 min → oil separates from edges = ready; colour tip: add a pinch of Kashmiri red chilli powder during grinding or in oil if colour is insufficient
✓ Variant 2 — Blanch & Strain: cross-cut base + remove eye → blanch in boiling water 3–4 min from second boil → immediate ice bath → peel skins easily (plus cut releases zero pulp wastage) → remove seeds and seed-water (prevents bitterness) → blend → strain through conical or home strainer → cook with 30ml vinegar + 1 tsp salt + 1 tsp sugar + small piece beetroot (natural deep red colour) → reduce on high flame → oil seal to finish
✓ Oil seal preservation system — heat refined oil to smoking point, cool completely to room temperature, pour 1 tsp over filled jar before sealing — creates anaerobic layer that prevents bacteria and fungus without any chemical preservative
✓ Storage: Sterilised jar, fridge 3–4 weeks, freezer 3–6 months, Ice cube tray freeze → transfer to zip lock bag
✓ Live demos: Chop Masala (1 min with Variant 1 after onion bhunai), Pink Sauce Pasta (Variant 2 + cheese + milk + cream + white sauce), Creamy Tomato Soup (4 frozen cubes + grated garlic + butter + black pepper + water + cream — ready in minutes)

Recipe:
To make commercial-grade homemade Tomato Puree without preservatives, use 100% hybrid or Bombay tomatoes (more pulp, less water, longer shelf life). For Variant 1 (Direct Grinding): rough chop 2 kg tomatoes, blend without water, heat 40ml refined oil in a kadhai, add puree with 1 tbsp salt and 30ml vinegar (natural preservative), cook on high flame 20–25 minutes until water fully reduces and oil separates from edges. For Variant 2 (Blanch & Strain): cross-cut the base of each tomato, blanch in boiling water 3–4 minutes from second boil, transfer to ice bath immediately, peel skins, remove seeds and seed-water (prevents bitterness), blend smooth, strain through a conical or home strainer, cook with 30ml vinegar + 1 tbsp salt + 1 tsp sugar + a small piece of beetroot for natural deep red colour. Reduce on high flame until thick, remove beetroot, cool completely. For both variants, heat refined oil to smoking point, cool to room temperature, pour 1 tsp over filled sterilised jar before sealing — this oil-seal layer prevents bacteria and fungus without chemicals. Yield: 2 kg tomatoes = 950g–1 kg puree. Storage: fridge 3–4 weeks, freezer 3–6 months. Variant 2 freezes well as ice cubes in a tray, then transferred to zip lock bags for portion-wise use.
