Lots of Corny love, Stephanie Ingredients 4-6 Chiles Guajillo, California, or New Mexico Chile 1-2 Chiles Pasillas 1 Box of Achiote (3.5 oz) 1 Bay Leaf 1 Tablespoon Mexican Oregano 1/2 Tablespoon Cumin 1 1/2Teaspoon Salt 3-4 Garlic Cloves 1/2 Teaspoon Ginger Powder 1/4 Teaspoon Cinnamon 1/4 Teaspoon Clove Powder or 2 Cloves 10 Pepper Corns or 1/2 Teaspoon Black Pepper 3/4 Cup Apple Cider Vinegar or White Vinegar 1 Cup Orange Juice 1 Can Pineapple juice or 3/4 Cup Pineapple Juice Optional- Juice of chipotle or a Chipotle Pod Add 1/4- Cup canola oil when marinading Protein Marinade Time Recommendation Pork, Beef, and Chicken - Minimum 12- 24 Hrs Seafood- 1 Hr Tofu- Over Night *Shrimp cooks easily with citrus and vinegar marinade 20-30 Mins Tips *If your Chiles are small use the larger quantity recommended *If you run out of marinade you can add 1 cup of orange juice, 1 Can pineapple Juice, 1/4 Apple cider vinegar to your blend. *I used marinade all marinade for 6 Pounds of Sliced Pork Butt and 3 Chicken Breast *My recommendations to adjust the salt to your taste.
