🌶️ ANDHRA PEPPER CHICKEN FRY 🌶️ A spicy, aromatic and incredibly flavourful Andhra-style Pepper Chicken Fry made with freshly roasted and coarsely ground black pepper masala. This chicken is slow-cooked with onions, curry leaves, green chillies and aromatic spices until every piece is coated with that delicious Andhra pepper masala. The freshly roasted pepper, coriander and cumin masala gives this dish a beautiful earthy aroma and a proper Andhra-style spicy kick! 🔥 This Andhra Pepper Chicken Fry is perfect as a main course with hot steamed rice, Baghara Rice or even as a delicious chicken starter. 🍗 INGREDIENTS – FOR 800g CHICKEN FOR ANDHRA PEPPER MASALA: • Black pepper – 2 tsp • Coriander seeds – 1½ tsp • Cumin seeds – 1 tsp Dry roast black pepper, coriander seeds and cumin seeds separately or together on low heat until aromatic. Allow to cool and grind to a coarse powder. Keep aside. FOR THE CHICKEN: • Chicken curry cut – 800g • Oil – 3 tbsp • Cumin seeds – 1 tsp • Fennel seeds – 1 tsp • Onion – 2 medium, finely chopped • Green chillies – 3–4, slit • Curry leaves – 2 sprigs • Ginger-garlic paste – 1½ tbsp • Turmeric powder – ½ tsp • Red chilli powder – 1½ tsp • Salt – to taste • Water – approximately ½ cup • Three Mango Chilli Powder – ½–1 tsp, or to taste • Garam masala powder – ½ tsp • Prepared Andhra pepper masala – 1½–2 tsp • Fresh coriander leaves – handful 👨‍🍳 METHOD 1️⃣ PREPARE THE PEPPER MASALA Dry roast black pepper, coriander seeds and cumin seeds until fragrant. Cool completely and grind into a coarse powder. This freshly made masala is the key to the flavour of this Andhra Pepper Chicken. 2️⃣ START THE CHICKEN Heat oil in a kadai or heavy pan. Add cumin seeds and fennel seeds. Let them splutter and become aromatic. Add chopped onions, slit green chillies and curry leaves. Cook the onions patiently until they turn nicely brown. This gives the chicken a deep, rich flavour. 3️⃣ ADD THE SPICES Add turmeric powder and red chilli powder. Add ginger-garlic paste and stir everything well. Cook until the raw smell disappears. 4️⃣ ADD THE CHICKEN Add 800g curry-cut chicken. Mix and stir very well so the chicken gets coated with the onion and spice mixture. Add salt and cook for a few minutes. 5️⃣ SLOW COOK THE CHICKEN Add approximately ½ cup water, mix well and cover with a lid. Cook for about 6–7 minutes on medium heat until the chicken is cooked through. 6️⃣ ADD THE ANDHRA PEPPER MASALA Now add: • Three Mango Chilli Powder • Garam masala powder • Fresh curry leaves • 1½–2 tsp of the freshly prepared Andhra pepper masala Mix everything really well. Continue cooking on low heat so the chicken slowly absorbs all the flavours and the masala coats the chicken beautifully. 7️⃣ FINAL FINISH Add freshly chopped coriander leaves.
