DUBAI CHOCOLATE KUNAFA COOKIES Ingredients Butter 175 grams Brown sugar 280 grams Salt 2 pinches Eggs 2 Flour 290 grams Cocoa powder 50 grams Baking soda 1 tsp Baking powder 1½ tsp Kunafa paste as required Method First mix butter with brown sugar until well combined. Add eggs and mix again. Then add flour cocoa powder baking soda baking powder and salt to make a dough. Keep the dough in refrigerator. Also place kunafa paste in refrigerator. Shape the dough into cookies and fill the center with kunafa paste. Bake at 160°C for 12–14 minutes and serve. LEMON MOUSSE CAKE Ingredients Milk 200 grams Lemon peel 10 grams Egg yolk 3 Sugar 60 grams Gelatin 8 grams Cream 200 grams Lemon juice 10 grams For Base: Butter 10 grams Biscuits 200 grams Method Crush biscuits and mix with butter until combined. Spread in a base and keep in freezer for 10 minutes. Boil milk with sugar and add lemon peel then cook lightly. Remove from heat when it comes to a boil. Add egg yolks and mix well then let it cool. Melt gelatin and add along with lemon juice and a little yellow food color.
