The church potato casserole in the long pan feeds twenty. Cook for one, and by Thursday it's soft and grey under the foil. Edna, 88, has cooked most of her life in Loma Linda, California, the town they call America's only blue zone, and at her church's fellowship lunch the casserole that went home empty came in a muffin pan.
Ten church potluck suppers, every one meatless and baked in one twelve-cup muffin pan, counted down, each with its price and how it comes back from the freezer: number ten, the potato casserole under a buttered corn-flake crown (about 75¢ a cup); Thanksgiving dressing from twice-baked bread, with a cashew mushroom gravy (about 80¢); chile relleno puffs, baked, not fried (about a dollar); lentils inside scalded-milk cornbread (about a quarter); macaroni in a cashew and pimiento sauce with no cheese in it, from a 1974 Loma Linda cookbook (about 55¢); green bean casserole made a supper, under oven-crisped onions (about 50¢); cabbage-leaf cups of barley and tomato, with no rolling and no pot (about 45¢); eggs baked in cream on greens (about 60¢); popovers with creamed asparagus and peas (about 40¢); and number one, pancit nests from rice noodles that are never boiled (about 40¢). Then the ruling, the Friday pan, and Mother's Sunday breakfast from the last cups of the week.
