🛒 Ingredients
For the rice
Basmati rice – 1 kg
Water – plenty for boiling
Salt – 2½–3 tbsp, or to taste
Bay leaves – 3
Cinnamon – 3 pieces
Cloves – 8–10
Green cardamom – 6
Black cardamom – 2
Shahi jeera – 1 tsp
Star anise – 2
For chicken marination
Chicken – 1 kg, preferably bone-in
Thick yogurt – 500 g
Ginger-garlic paste – 4 tbsp
Green chilies – 8–10 paste
Red chili powder – 2½ tbsp
Turmeric – 1 tsp
Biryani masala – 2 tbsp
Garam masala – 1 tsp
Lemon juice – 3 tbsp
Salt – 2 tbsp, adjust to taste
Mint leaves – 2 cups
Coriander leaves – 2 cups
Fried onions – 2 cups
Oil – 1 cup
Ghee – 4 tbsp
👩🍳 Method
1. Marinate the chicken
In a large bowl, mix chicken, yogurt, ginger-garlic paste, green chilies, red chili powder, turmeric, biryani masala, garam masala, lemon juice, salt, mint, coriander, fried onions, oil and ghee. Mix very well.
For best Hyderabadi-style flavor, marinate for at least 2 hours, preferably overnight in the refrigerator.
2. Prepare the rice
Wash and soak the rice for 30 minutes.
Bring plenty of water to a strong boil. Add salt and all the whole spices. Add soaked rice and cook until the grains are about 70% cooked—the center should still be slightly firm.
Drain immediately.
3. Layer the biryani
Place the marinated raw chicken at the bottom of a heavy-bottomed pot. Spread it evenly.
Add the 60% cooked rice on top.
Sprinkle:
Fried onions
Mint
Coriander
3–4 tbsp ghee
A little saffron soaked in warm milk, if desired
4. Dum cooking
Cover the pot tightly with a lid. Cook on medium-high heat for about 8–10 minutes, then reduce to the lowest heat and cook for 30–35 minutes.
Turn off the heat and let the biryani rest, covered, for 15–20 minutes.
5. Serve
Gently mix from the bottom so the chicken and rice combine without breaking the rice.
Serve hot with Mirchi ka Salan, onion raita and lemon. 🍗🍚🔥
⭐ Hyderabadi Biryani Tips
Use bone-in chicken for better flavor.
Don't fully cook the rice before dum; 70% is enough.
The chicken should be in a single even layer at the bottom.
Don't open the lid repeatedly during dum.
For authentic flavor, fresh mint, coriander, fried onions and ghee make a big difference.
