Pizza never came to America as restaurant food. It came out of bread ovens at the end of the day, for people too tired to cook. My family has run one of those ovens since Mulberry Street in the 1880s, and these are the 15 pizza dinners we actually make on the nights nobody has anything left. Not one of them asks you to make dough. The grandma pie with the cheese underneath, the Palermo sfincione, a white clam pie out of a can, the tomato pie that is supposed to be eaten cold, the right way to bake a frozen pizza, and the two words the old men used when they called the pizzeria. And one of these is a "pizza" with no crust, no dough and no cheese at all. See if you can guess it before number ten.
