RECIPES
Traditional Irish Wheaten Bread
Ingredients
225 g plain flour
110 g wholemeal flour
110 g rolled oats
1 tsp salt
2 tsp bicarbonate of soda
300 ml buttermilk
85 ml water
Method
Preheat the oven to 180°C. Mix all the dry ingredients, then add the buttermilk and water. Shape into a round loaf, cut a deep cross on top, dust with flour and bake for 30–35 minutes.
No-Bake Raspberry Oat Bars
Raspberry layer
250 g raspberries
2 tbsp chia seeds
2 tbsp water
Base
180 g rolled oats
100 g oat flour
80 g peanut butter
80 ml maple syrup
45 g melted coconut oil
Simmer the raspberries with the chia seeds and water for a few minutes, then mash with a fork. Mix the base ingredients together, reserving a little for the topping. Press most of the mixture into a lined loaf tin, spread over the raspberry layer, crumble the remaining oat mixture on top and refrigerate until firm.
