🍋 THE BEST LEMON POUND CAKE I'VE EVER MADE! If you love a homemade lemon pound cake with a tender, buttery crumb and bright lemon flavor, you're going to want to try this one! Welcome to The Sweet Life with Raina! 💙 Today, I'm taking you through my process of making a delicious Lemon Supreme Pound Cake from scratch. And here's something you might find surprising: there's NO lemon juice in this cake batter! 👀🍋 Instead, I'm building layers of lemon flavor using fresh lemon zest and lemon emulsion. Throughout this tutorial, I'll share ingredient measurements, mixing techniques, and baking tips to help you understand not just HOW to make this cake, but WHY certain steps matter. Let's get into it! 🍋 LEMON SUPREME POUND CAKE RECIPE INGREDIENTS: 🧈 3 sticks unsalted butter (1½ cups) 🧈 4 oz cream cheese 🍚 3 cups granulated sugar 🍋 Zest of 1 large lemons 🥚 6 large eggs 🍋 1 tablespoon lemon emulsion 🌼 ½ tablespoon vanilla bean paste 🥣 3½ cups sifted cake flour 🥛 1 cup buttermilk 🔥 BAKING INSTRUCTIONS 1. Preheat the oven. Preheat your oven to 325°F and thoroughly prepare your Bundt pan to prevent sticking. I spray my generously and then place kn the freezer while I prep my batter. 2. Make the lemon-infused sugar. Add the zest of 2 large lemons to the granulated sugar. Using your fingertips, massage the zest into the sugar until fragrant. This helps release the natural oils from the lemon zest and distributes the citrus flavor throughout the sugar. 3. Cream the butter and cream cheese. In a large mixing bowl or stand mixer, beat the softened butter and cream cheese until smooth and well combined. 4. Add the lemon-infused sugar. Gradually add the lemon-infused sugar to the butter and cream cheese mixture. Continue creaming until the mixture is light and fluffy (no less than 5 minutes on med/high), scraping down the sides of the bowl as needed. 5. Incorporate the eggs. Add the eggs one at a time, mixing after each addition until incorporated. Scrape down the sides and bottom of the bowl as needed. 6. Add the flavorings. Mix in the lemon emulsion and vanilla bean paste until evenly distributed. 7. Add the flour and buttermilk. With the mixer on low speed, alternate adding the sifted cake flour and buttermilk, beginning and ending with the flour. Mix just until incorporated, being careful not to overmix the batter. 8. Fill the Bundt pan. Transfer the batter to your prepared Bundt pan and spread it evenly. 9. Bake. Bake at 325°F for approximately 1 hour and 20 minutes (80 minutes), or until the cake tests done. Oven temperatures and baking times may vary. 10. Demold the cake. I remove my cakes from thr pan within 5 minutes after removing from the oven 💡 BAKING TIPS 🍋 Massage fresh lemon zest into the granulated sugar to release its fragrant oils and distribute the citrus flavor. 🧈 Use softened butter and cream cheese for easier mixing. 🥚 Add eggs gradually, allowing them to incorporate into the batter. 🥣 Avoid overmixing once the flour is added. 🍰 Allow the cake to cool appropriately before removing it from the pan. 💙 ABOUT THE SWEET LIFE WITH RAINA Welcome to my little corner of the baking world!
