Chicken Xacuti is a famous Goan dish. Its traditional and everyone loves it. Its easy to make and is delicious for any occasion. Since I have some Goan roots I love this recipe and have had it since childhood. So please try and let me know how it went.
INGREDIENTS:
Chicken- 1 kg (with bones)
Ghee- 2 tbsp
Salt to taste
For Xacuti masala
Red chilies (dried)- 6-8 nos
Coriander seeds- 1 tbsp
Sesame seeds- 1 tsp
Cloves- 1 tsp
Jeera/ cumin- 1 tsp
Methi seeds- ¼ th tsp
Pepper corn- 8-10 nos
Khus khus- 1 tsp
Sauf- 1 tsp
Turmeric powder- 1 tsp
Coconut (desiccated)- ½ cup
Tamarind pulp- 2 tbsp
Garlic cloves- 5-6
Onion- 1 sliced
METHOD:
1. Wash chicken and keep aside
2. Add all dry spices to a pan and dry roast them. Keep aside.
3. Add the red chilies, fry, keep aside.
4. Add the coconut, fry until golden brown (don’t burn). Keep aside.
5. Then fry half onion sliced and the garlic until it turns golden brown. Keep aside to cool.
6. Add all fried items to a mixy jar along with turmeric and the tamarind pulp and grind into a fine paste.
7. Heat a deep pan, add ghee and fry the remaining half onion sliced.
8. Add the chicken, salt and fry for 5 minutes.
9. The chicken releases water and changes colour. Now add the ground masala and mix well. Fry for another 5 min.
10. Now add about 1- 1 ½ cup water (according to your preference) and let it cook for about 20 min. But do keep checking.
11. After 20 min check for seasoning, add in more salt or spice if required. Check for gravy consistency add more water if required. Preferably keep the gravy a little thick. Check if meat is cooked. If not cook for another 10 min.
12. If all ok and chicken is cooked, gravy looks like it released some oil. At this point put off heat.
13. Serve hot with Kori roti, rice, dosa or idli.
