In the lively city Kamikawabata shopping district of Fukuoka City, you'll find "Hakata Kawabata Dosanko Main Store," a famous miso ramen restaurant where lines form even before opening.
Founded 56 years ago, the second-generation owner, Taro Iwanaga, took over the business 26 years ago after his father's illness.
Based on authentic Sapporo miso ramen, he has researched and perfected a recipe to suit the tastes of Hakata residents. His secret miso sauce creates a light and gentle flavor that is highly praised.
Another hugely popular item on the menu is their fried rice.
The secret to its deliciousness lies not only in the quality of the ingredients but also in the "heat applied." To ensure the rice is piping hot to the core, the owner vigorously tosses the pan with his whole body.
The owner, who transitioned from the apparel industry, says, "Clothes and ramen are the same; it's not just about making delicious food, but also about continuously thinking about how to make customers happy." Sharing this philosophy with his staff, the restaurant is filled with energetic greetings and calls. In Hakata, a city where tonkotsu ramen is the mainstream, we followed Dosanko for a day as he aims to become a "supporting actor" in Hakata's gourmet scene.
