Most people cook fish wrong, and it isn't the fish's fault. When nothing protects the surface, the outside goes pale and the inside dries out. This Kerala-style Indian trick fixes it: one thick spice paste that fries into a crisp, peppery crust, so the fish inside stays moist and flaky every time. 🐟🔥
On the coast of Kerala, fried fish is everyday food, and every family has its own version. This is a home version that works with fish from any American supermarket. In this video: which fish to buy, the paste for 1 lb of fish, how long to rest it (and why longer is worse), the one thing you must not do in the pan, and how to know it's done without guessing.
🐟 FOR ABOUT 1 LB OF FISH
• Firm fillets or steaks, ¾ to 1 inch thick: tilapia, catfish, mahi mahi, swordfish, halibut or salmon (cod works, handle gently)
• 1 teaspoon Kashmiri chili powder (or 1 tsp sweet paprika + ¼ tsp cayenne)
• ¼ teaspoon turmeric
• ½ teaspoon freshly ground black pepper
• 1 teaspoon ginger garlic paste
• ¾ teaspoon salt
• 1 tablespoon lemon juice
• 1 tablespoon rice flour (or cornstarch)
• 3 tablespoons coconut oil or neutral oil
• A sprig of curry leaves (optional)
👩🍳 THE METHOD IN SHORT
1. Pat the fish completely dry. Shallow cuts on thick pieces.
2. Mix a thick paste. Rub it on every side.
3. Rest covered in the FRIDGE 15 to 30 minutes, no longer.
4. Heat a cast iron pan with the oil. Curry leaves in first (dry them).
5. Lay the fish away from you. Don't crowd the pan.
6. Don't touch it for 3 to 4 minutes. Flip once. 2 to 4 minutes more.
7. Done at 145°F in the thickest part, or when opaque and flaking easily with a fork.
⚠️ FOOD SAFETY
Keep raw fish in the fridge, never on the counter. Wash hands, board and plate after handling. Never use the marinade as a sauce, and never put cooked fish on the raw-fish plate. Leftovers: refrigerate within 2 hours, eat within 3 to 4 days.
🛟 IF IT GOES WRONG
Crust sticks and tears: pan not hot enough, or fish moved too soon.
Burnt outside, raw inside: heat down to medium; lid for 1 to 2 minutes on thick steaks.
Falls apart: fish too delicate, rested too long, or flipped more than once.
