Salmon Patties: Ingredients: Leftover salmon salad (or 2 cans of salmon, 1 tbsp sour cream, 1 tbsp mayo, dash of Dijon mustard, minced onions, smoked paprika, salt, pepper, chopped boiled eggs, and pickles). Binder: Add 1/4 to 1/2 cup flour of your choice, we used Almond flour for these and they turned out great! 2 eggs 1/2 cup diced onion salt & pepper To Cook: Form into patties and fry in a skillet until golden brown on both sides. Air Fryer Sweet Potato Wedges: Slice sweet potatoes into wedges (microwave for a few minutes first to soften for easier slicing!). Toss with avocado oil, salt, and pepper. Air fry at 400°F for about 15- 20 minutes or until crispy. Homemade Buttermilk Biscuits: Ingredients: 2 cups flour, 1 TB baking powder, 1 tsp salt, 1 stick of cold butter, buttermilk (add until the dough reaches the right consistency). Method: Cut the butter into the flour, stir in buttermilk, and bake at 375°F until golden. Dinner 2: Skillet Pork Chops & Sautéed Squash Skillet Pork Chops: Ingredients: Bone-in or boneless pork chops, Coach Joe’s seasoning (or salt and pepper). To Cook: Sear in a hot iron skillet until cooked through and juicy. Sautéed Squash & Onions: Ingredients: Sliced yellow squash and one chopped onion. To Cook: Sauté in the skillet with a little oil or butter, and salt & pepper, until tender and slightly caramelized. Serve with a side of northern beans.
