I am eighty-two, and I learned every one of them at her elbow out in the valley, back when the flour came in one sack and had to carry a houseful of children through to spring, and a woman who wasted anything at all went short in February. One of them I have done every single morning for fifty years and never once told a living soul how, the thing I feed the crock on the back of my stove, the start my mother had from her mother before her. My own grandchildren have been after me for years and could not get it out of me. Until now. These were never recipes anybody set down on paper. They were HEAT and TIME, and most of them went into the ground with the women who held them. Today I count down all 17 of them — the whole of it, in order, down to the one I would not rightly call a trick at all — so that a heavy pan of rolls and a broken cheese sauce never have to be the ordinary way of things in your kitchen the way they were in mine for years.
