Twelve Nigerian soups in one pot of memory, my dear. Some you know by heart, and some are the quiet village and regional ones we cook far less than we used to. Today we bring them all back to the table, the plant way. 🍲🌿 This is a full tour of twelve classic Nigerian soups, cooked vegan, with the deep savory soul built from red palm oil, iru and ogiri (fermented locust bean), mushrooms, soy chunks and smoked tofu instead of meat and fish. I'll show you where each one comes from, the leaf or seed that gives it its name, how to build it, the swallow it belongs with, and where to find each leaf in a Western kitchen. THE 12 SOUPS IN THIS VIDEO Egusi (ground melon seed) Okra soup (okro) Efo Riro (Yoruba stirred greens) Ogbono (wild mango seed) Bitterleaf soup (Ofe Onugbu) Ewedu (jute leaves) Edikang Ikong (Efik vegetable soup) Afang soup (okazi leaf) Oha soup (Ora) Banga (Ofe Akwu, palm-fruit soup) Gbegiri (Yoruba bean soup) Miyan Taushe (Hausa pumpkin & groundnut soup) YOUR VEGAN KIT OF SAVOR Red palm oil, iru or ogiri (fermented locust bean), fresh and dried mushrooms, soy chunks, smoked tofu, a pinch of smoked paprika, good vegetable stock and salt. This is how a plant pot tastes like it cooked all day. WHAT YOU'LL LEARN The shared base almost every Nigerian soup starts from How to cook egusi so it comes out grainy and rich, never raw and pasty Keeping draw soups (okra, ogbono) bright and stretchy instead of dull Washing bitterleaf and oha the right way Cooking green soups thick, not watery Storing and freezing soups safely for the whole week STORING IT Cool soup promptly, refrigerate within about an hour at 40°F or colder, keep 3–4 days. Most freeze well, so portion and freeze flat. Reheat all the way to steaming hot. Reheating won't fix soup left sitting out warm, so store it with care. TELL ME IN THE COMMENTS 👇 Which soup did your family make? Which one brought your grandmother's kitchen rushing back? And which one have you never tasted but now want to learn? Tell me the soup, and which part of home your people are from. If this is the kind of cooking you grew up near, or wish you had, pull up a chair and stay.
