Mutton Rara 🍖
Prep Time: 25–30 mins
Cooking Time: 1.5–2 hours
Serves: 4–5
Homemade Garam Masala:
Dry roast 1½ tbsp cumin, 1½ tbsp coriander, 20–22 green cardamoms, 10–12 black cardamoms, 28–30 cloves, 4–5 cinnamon sticks, 1½ tbsp black pepper, 1 tbsp fennel seeds and a pinch of salt. Cool and grind into a fine powder.
For Marination:
1 kg mutton, with bones
350 g mutton kheema
Salt to taste
½ tsp turmeric
1 tbsp Kashmiri chilli powder
4 tbsp ginger-garlic-chilli paste
300 g curd
Mix everything well and marinate for at least 1 hour, preferably overnight.
For the Gravy:
Heat 4 tbsp ghee + 2 tbsp oil. Add cumin, cinnamon, green & black cardamom, cloves and bay leaf. Add 700 g chopped onions + a pinch of salt and cook until deep golden brown.
Add 4 tbsp ginger-garlic-chilli paste and cook for 3–4 minutes. Lower the flame and add ½ tsp turmeric, 3 tbsp Kashmiri chilli powder, 2 tbsp spicy chilli powder, 4 tbsp coriander powder and 1 tbsp cumin powder. Mix well.
Add 300–400 ml hot water and cook until the oil separates. Add 4 finely chopped tomatoes, cover and cook for 8–10 minutes until the tomatoes completely blend into the masala.
Add the marinated mutton and kheema. Cook on high heat for 10 minutes, then cover and cook on the lowest flame for 1–1½ hours, or until the mutton is tender. Stir occasionally and add hot water if needed.
Once the mutton is almost done, add 2 tsp homemade garam masala, 2 tsp kasuri methi, julienned ginger, 3–4 slit green chillies and fresh coriander. Cook for another 10 minutes.
Adjust salt, finish with 1 tsp lemon juice and fresh coriander.
Your delicious Mutton Rara is ready! ❤️ Serve hot with tandoori roti, naan, paratha or rice.
