the taste of summer

Some things are worth making simply because they belong to a particular time of year and elderflowers are one of those things for me. I grew up with the seasons being part of everyday life in a very tangible way. We noticed what was growing, gathered it while it was there, and found a way to make something from it. It was never a grand occasion or anything that needed much thought. It was simply what we did. There was something very comforting in those simple ways of living, and I suppose some of them stayed with me. Perhaps that’s why, even now, so many years later, making elderflower syrup feels less like a project and more like coming back to a familiar feeling. A nostalgic one, I might say.
