These golden, crunchy fritters made with soaked sabudana, potatoes, and roasted peanuts are full of flavor and very easy to make. They are light, crispy from outside and soft from inside. Serve them hot with vrat chutney and enjoy a perfect Navratri treat.
Ingredients
• 1 cup sabudana (soaked for 5–6 hours and strained)
• 2–3 medium boiled potatoes (grated)
• ½ cup roasted peanut powder
• 1 tsp ginger paste
• 2 chopped green chillies
• Sendha namak (rock salt) to taste
• 1 tsp jeera (cumin seeds)
• Fresh chopped coriander leaves
• Oil for frying
Method
Soak sabudana for 5–6 hours and strain the excess water.
Dry roast peanuts and grind them into a coarse powder.
In a mixing bowl add soaked sabudana, grated boiled potatoes, and roasted peanut powder.
Add ginger paste, chopped green chillies, sendha namak, jeera, and fresh coriander leaves.
Mix everything well until it forms a dough-like mixture.
Grease your hands with a little oil and shape the mixture into small patties.
Heat oil in a pan and fry the patties on medium flame until they turn golden brown and crispy.
