Preparation (0:00 - 4:05): Soaking and Sprouting: Jowar grains are washed and soaked in water, then tied in a cloth for 7-8 hours to encourage light sprouting (0:00-2:15). Milling: The semi-dried, sprouted grains are pulsed in a mixer to create a coarse, flour-like consistency (2:40-3:00). It is important to remove the bran (konda) to achieve the right texture (3:15-4:05). Cooking (5:05 - 13:04): Mixing: The coarse flour is mixed with curd (or buttermilk) and water (5:20-6:00). Seasoning: The mixture is seasoned with salt, black pepper powder, finely chopped green chilies, grated coconut, and optional cashews for added flavor (7:05-8:00). Cooking Process: The Ambil is cooked on a low flame while stirring constantly (8:17-9:06). Additional hot water may be added as needed to reach the desired consistency (9:27-9:30). Finishing Touches: Separately, jaggery is dissolved in water (10:26-10:52). Once the Ambil is cooked and bubbling, the jaggery water and a drizzle of ghee are added to balance the flavors (12:41-13:04).
