Honey Cake (Medovik) Soft, Tender & Delicious Layer Cake Today I’m cooking a classic Honey Cake, or Medovik — a soft, tender, beautifully layered cake with a rich honey flavor and creamy frosting. It’s perfect for enjoying with family or friends over tea, especially on a cozy autumn day. Despite the impressive layers, this cake is quite simple to make. Follow the steps carefully, and you’ll get a wonderful result. Ingredients For the cake layers 2 eggs 150 g sugar 1/2 tsp salt 3 tbsp honey 100 g butter 1 heaping tsp baking soda 450 g flour About 100 g additional flour for kneading and rolling For the frosting 1 container sour cream 1 can sweetened condensed milk 1 tsp cornstarch Optional: Cream cheese Heavy whipping cream For decoration Cake crumbs Fresh berries or nuts Instructions 1. Prepare the honey mixture In a saucepan, combine the 150 g sugar, 2 eggs, and 1/2 salt. Add the 100 g butter and 3 tbsp honey. Place the saucepan over medium-low heat and stir constantly until the butter melts and the sugar and honey are fully incorporated. Add the 1 heaping tsp baking soda. The mixture will become lighter in color and increase in volume. Remove from the heat and transfer to a large clean bowl. 2. Make the dough Gradually add the flour, mixing first with a whisk or spatula. Transfer the dough to a lightly floured surface and knead for about 1–2 minutes, just until smooth. Divide the dough into equal portions. For a 9-inch cake, I made 12 layers. Refrigerate the dough portions for 30 minutes. 3. Roll and bake the layers Roll each piece of dough into a very thin circle. Prick the surface all over with a fork. Bake each layer at 350°F (175°C) for about 5 minutes. While each layer is still warm, place a 9-inch cake pan, plate, or cake ring on top and trim it into a perfect circle. Save all the trimmed edges. 4. Make the cake crumbs Place the baked scraps in a blender or food processor and process until they become fine crumbs. Set aside for decorating the finished cake. 5. Prepare the frosting Combine the sour cream, sweetened condensed milk, and cornstarch. Whip until smooth and creamy. For a richer or thicker frosting, you can also add cream cheese or whipped heavy cream. 6. Assemble the Medovik Spread a small amount of frosting onto your cake stand or serving plate. Place the first cake layer on top. Spread a generous layer of frosting over it. Continue alternating cake layers and frosting until all the layers are used. Cover the top and sides of the cake with the remaining frosting. 7. Decorate Coat the entire cake with the prepared honey cake crumbs. Decorate with fresh strawberries, raspberries, blueberries, or your favorite nuts. For the best texture, let the cake rest in the refrigerator so the thin honey layers can absorb the cream and become beautifully soft.
