Sambar Rice Recipe | South Indian Veg Sambar Rice | Easy & Comforting One Pot Meal
Today I’m making a delicious and comforting South Indian-style Sambar Rice loaded with vegetables, toor dal, rice and aromatic sambar spices. This easy Veg Sambar Rice is perfect for a wholesome lunch or dinner and is best served hot with a generous touch of ghee.
In this recipe, rice and toor dal are pressure cooked until soft, then combined with perfectly cooked vegetables, homemade sambar powder, tamarind and aromatic tempering. Fresh coriander and ghee at the end take the flavour to the next level.
🥘 SAMBAR RICE INGREDIENTS
For Rice & Dal:
• Sona Masuri Rice – 250 g
• Toor Dal – 150 g
• Turmeric Powder – ½ tsp
• Cooking Oil – 1 tbsp
• Salt – 1½ tsp
• Hot Water – 800–900 ml
For Sambar:
• Cooking Oil – 3 tbsp
• Mustard Seeds – 1 tsp
• Cumin Seeds – 1 tsp
• Dry Red Chillies – 3
• Hing – ¼ tsp
• Garlic Cloves – 8–10, crushed
• Sambar Onion / Small Onion – 150 g
• Green Chillies – 2–3
• Curry Leaves – 1 sprig
• Turmeric Powder – ½ tsp
• Red Chilli Powder – 1 tsp
• tomato 250g
• Carrot – 100 g
• Bottle Gourd – 150 g
• Drumsticks – 2
• Salt – to taste
• Hot Water – as required
• Homemade Sambar Powder – 3 tbsp
• Coriander Powder – 1 tsp
• Tamarind Pulp – 3 tbsp
• Fresh Coriander Leaves – handful
• Ghee – 1–2 tbsp
👨🍳 METHOD
1. Wash and soak the toor dal and Sona Masuri rice separately.
2. Add the soaked toor dal and rice to a pressure cooker. Add turmeric powder, cooking oil, salt and hot water. Add approximately double the quantity of water and pressure cook for 2–3 whistles until the rice and dal are soft and well cooked.
3. Heat cooking oil in a kadhai. Add mustard seeds and allow them to splutter.
4. Add cumin seeds, dry red chillies, hing and crushed garlic. Sauté until aromatic.
5. Add sambar onion, green chillies and curry leaves. Sauté until the onions become soft.
6. Add turmeric powder and red chilli powder. Mix well.
7. Add carrot, bottle gourd and drumsticks. Add salt and stir-fry for a few minutes.
8. Add hot water, cover and simmer until the vegetables are fully cooked and tender.
9. Add homemade sambar powder, coriander powder and tamarind pulp. Mix well and cook until the raw smell disappears.
10. Adjust the salt according to taste.
11. Add the boiled rice and dal mixture. Mix everything well until the rice, dal, vegetables and sambar masala are completely combined.
12. Add fresh coriander leaves and ghee. Mix gently and simmer for another 2–3 minutes.
13. Serve hot with an extra drizzle of ghee.
💡 TIP:
Sambar rice becomes thicker as it cools, so keep the consistency slightly loose while cooking. Adding hot water helps achieve a creamy and perfectly flowing consistency.
