Nobody Believes These Crispy Samosas Aren't Made with Pastry!

Crispy golden potato and pea samosas made with ordinary flour tortillas — no homemade pastry needed! These are packed with a beautifully spiced potato filling, sweet green peas and plenty of flavour.
I'm using a simple trick: cut a tortilla in half, fold it into a triangle, fill it and cook until golden and crisp. The filling has cumin, ginger, green chilli, garam masala and a little amchur for that lovely tangy finish.
I've also added kalonji (nigella) seeds to the outside for extra flavour and a lovely finish.
They're inexpensive, easy to make and perfect for a snack, party food or something different for lunch. I'll show you how to make them step by step, without the fuss of making traditional samosa pastry.

Ingredients
• 6 large flour tortillas
• 600 g potatoes, peeled and cut into chunks
• 150 g frozen peas — about 1 UK cup / 1¼ US cups
• 1 tbsp oil — 15 ml; 1 UK tbsp; 1 US tbsp
• 1 tsp cumin seeds — about 2 g
• 1 medium onion, finely diced — about 150 g
• 1 tbsp fresh ginger, finely grated — about 15 g
• 1–2 green chillies, finely chopped
• 1 tsp ground coriander — about 2 g
• 1 tsp ground cumin — about 2 g
• ½ tsp turmeric — about 1.5 g
• 1 tsp garam masala — about 2 g
• ½ tsp chilli powder — about 1 g
• 1 tsp amchur/dried mango powder — about 3 g
• 1 tsp fine salt — about 6 g, or to taste
• 2 tbsp fresh coriander/cilantro, chopped — about 8 g
• Oil for brushing, spraying or frying
For sealing
• 2 tbsp plain/all-purpose flour — about 16 g
• 2 tbsp water — 30 ml
Oven: Brush generously with oil and bake at 200°C / 400°F for about 15–18 minutes
