Karchikayi Palya (Momordica Cymbalaria Stir Fry) is a unique, rare, and highly nutritious vegetable stir-fry from North Karnataka. This tiny, bitter-gourd-like vegetable grows wild and is exclusively available during the monsoon season. It pairs beautifully with Jolada Rotti (sorghum flatbread) or chapati.
Here is the authentic North Karnataka recipe to prepare this seasonal delicacy:
📋 Ingredients
• Karchikayi - 250 grams
• Oil - 2 tablespoons
• Mustard seeds - 1/2 teaspoon
• Cumin seeds (Jeera) - 1/2 teaspoon
• Garlic - 5 to 6 cloves (crushed)
• Onion - 1 medium (finely chopped, optional)
• Turmeric powder - 1/4 teaspoon
• Red chili powder - 1 teaspoon
• Niger seeds powder (Hucchellu / Gurellu powder) - 2 tablespoons (This is the star ingredient that gives the authentic North Karnataka flavor)
• Salt - To taste
• Coriander leaves - A small handful (finely chopped)
🍳 Step-by-Step Instructions
1. Prep the vegetable: Wash the Karchikayi thoroughly. Trim the edges and finely chop them.
2. Pre-cook: Heat 1 tablespoon of oil in a pan. Add the chopped Karchikayi and sauté them on medium heat for 3–4 minutes until they shrink slightly and soften. Remove them from the pan and keep them aside.
3. The Tempering: In the same pan, add another tablespoon of oil. Once hot, add mustard seeds and let them splutter. Add cumin seeds and crushed garlic, frying until the garlic turns golden.
4. Sauté Onions: If you are using onions, add them now and fry until they turn translucent.
5. Combine: Add the pre-cooked Karchikayi back into the pan. Stir in the turmeric powder and salt. Mix well.
6. Add the Spices: Lower the heat and add the red chili powder and the essential Niger seeds (Gurellu) powder. Toss everything together until the spices evenly coat the vegetable.
7. Finish: Garnish with freshly chopped coriander leaves, mix one final time, and turn off the heat. Your bitter-tangy Karchikayi Palya is ready to serve.
