The history of the hamburger isn't just a simple recipe origin—it's the story of how a highly controversial, dangerous 19th-century street hazard became a national icon. Before fast food chains existed, buying ground beef from a street cart was considered a terrifying culinary gamble.
In the early 1900s, following a massive public health scandal, ground meat became America’s most feared food. In this episode of Baking History, we explore the paradox of the hamburger: how a bizarre medical experiment, pristine white hospital tiles, and the engineering of the perfect bun saved this dish from being entirely outlawed. I also baked the original style of the hamburger bun to see exactly how its unique texture kept this messy, "hazardous" meat together for people who had no time to sit down.
