Eating out in Japan for the first time? Here's what nobody tells you: how to get a table, how ticket-machine restaurants work, the mystery dish (otoshi) that shows up on your bill, how to order and call the staff, the table manners that actually matter, and how to pay — without tipping.
TL;DR
• Hold up your fingers for how many people, then wait to be seated
• Ticket machine by the door? Buy your ticket first (keep some cash)
• Izakaya: expect otoshi, a small cover charge (about ¥300–600 per person)
• Say "sumimasen" or press the call button to order
• Never stick chopsticks upright in rice; slurping noodles is fine
• Pay at the register by the exit. Don't tip.
