Affinity Designer 2 for iPad: How to Track and Kern Text

So, someone asked me a very interesting question recently! How the heck can we track and kern text in Affinity Designer 2 on iPad...and where are the controls?! It has changed a bit since version one so I thought I'd put this together for you guys so you can learn.
