Orcs, Goblins, and Uruk-hai: What's the Difference?

The Hobbit calls them goblins. The Lord of the Rings calls them orcs. Then Saruman starts pulling Uruk-hai out of the mud, and they look like orcs that have been to the gym. So are these three different things, or is Middle-earth just bad at naming monsters?
