This easy banana cake recipe is perfect for breakfast, an afternoon snack, or a sweet treat to enjoy with your family. You don't need complicated ingredients or advanced baking skills to make this delicious homemade cake! 🛒 Ingredients (For an 18cm / 7-inch pan & 3 eggs): Bananas: 2 - 3 ripe bananas Caramel Layer: Sugar: 48g Water: 15ml Butter (unsalted or plant-based): approx. 5g Sponge Cake Batter: Eggs: 3 (separated into egg whites and yolks) Unsweetened fresh milk: 51ml Cooking oil: 36ml Vanilla extract: 1/2 tsp Cornstarch: 11g Baking powder: 1/4 tsp All-purpose flour: 78g Sugar (for egg whites): 57g (divided into 3 parts) Lemon juice: a few drops Equipment: 18 cm round cake pan. 👩‍🍳 Step-by-Step Instructions: Step 1: Prep the Bananas Peel the bananas, then cut and shape them to your liking. Step 2: Make Caramel & Arrange Bananas Boil 48g sugar and 15ml water over medium heat. Once it turns amber-brown, add a bit of butter, stir well, and turn off the heat. Pour immediately into the 18cm pan to coat the bottom. Let it cool until hardened, then arrange the bananas in a neat single layer on top. Step 3: Make the Egg Yolk Mixture Whisk 3 egg yolks with 51ml milk, 36ml oil, and vanilla until combined. Sift in cornstarch, baking powder, and flour. Mix well until smooth and lump-free. Step 4: Whip Egg Whites & Fold Batter Whip 3 egg whites with a few drops of lemon juice until frothy. Gradually add 57g sugar (in 3 parts) and whip until soft peaks form. Gently fold the egg whites into the yolk mixture from the bottom up until fully incorporated without deflating the bubbles. Step 5: Pour & Bake Carefully pour the batter over the bananas. Preheat the oven to 150°C (302°F) for 10 mins. Bake at 150°C for 55–65 mins (test doneness with a toothpick). Step 6: Finishing Touches Let it cool slightly, then invert the pan onto a plate to reveal the gorgeous caramel banana layer. Slice, serve, and enjoy with a warm cup of tea! 👍 If you enjoyed this recipe, please LIKE the video, leave a COMMENT, and SUBSCRIBE for more easy and delicious homemade recipes. 🔔 Turn on notifications so you never miss a new recipe!
