Without thinking twice, I got out of bed, drawn by the urge to make pickled garlic just like in the old days. For the autumn that’s arriving, for the winter whose cold I can already feel approaching.
I opened the window, and the cool morning air came in, along with the sound of birds from the yard. I brewed some tea, sat down at the kitchen table, and began — slowly, without rushing, exactly as this work has always been meant to be done.
By the traditional, authentic method, real pickled garlic should rest for at least seven years before its flavor is complete — seven years of patience, seven years of waiting. But I don’t have quite that much patience, so I make it the faster way — still made with love, just with a little more haste.
I cleaned the garlic cloves one by one, washed them, and set them aside to let the water fully drain. The night before, I had soaked tamarind in water and placed it in the fridge to soften slowly. Now it was time to bring everything together.
I added some salt, one liter of 5% white vinegar, and the tamarind water to the garlic. I placed it on the stove and let it boil for fifteen minutes, while steam filled the kitchen and that sweet-and-sour scent spread through the air. Then I set it aside to cool slowly.
Finally, I carefully poured everything into a clean jar and sealed it tightly. Now, all that’s left is to wait — two or three months, until that familiar flavor is fully ready.
Pickled garlic isn’t just a pickle to me; it’s a powerful, healthy remedy, especially on cold days when colds and flu come around. They say it’s better than antibiotics, and I believe it.
Alongside the pickled garlic, I also prepared a simple but delicious kabab — because the wonderful aroma already filling the kitchen deserved to be completed with a warm, satisfying meal.
I thoroughly mixed 800 grams of ground meat with two finely chopped onions, garlic powder, salt, and paprika powder, letting all the flavors come together. Then I transferred it to a dish and shaped it into slices.
Finally, I placed it in the oven to grill slowly until perfectly done. Alongside it, I added a few tomatoes to roast in the oven as the kabab cooked — because when the flavor of the kabab blends with roasted tomatoes, it creates something truly wonderful; simple, yet full of homemade flavor.
