Mutura is a traditional African sausage, mainly popular in Kenya, and especially loved among the Kikuyu community, though today it’s enjoyed by almost everyone in the country.
It’s made by stuffing goat or cow intestines with a mixture of minced meat, blood, onions, herbs, and spices, then boiling and roasting it over an open fire. The smoky flavor is what makes it special — many people enjoy it freshly made by roadside vendors at night, usually served with salt and chili.
Historically, mutura came from the Kikuyu culture, where it was prepared during ceremonies or after slaughtering livestock, so nothing went to waste. Over time, it became a popular street food across Kenya, sometimes called the “African sausage.”
You can find similar dishes in other countries too — for example:
South Africa has boerewors (though it’s not made with blood).
Zimbabwe and Uganda also have their own versions of stuffed intestines.
In Europe, there’s black pudding or blood sausage, which is quite similar in idea to #mutura
