So... let's make salmon
marinated in soy sauce.
0:00:13
Many of you asked for the recipe.
0:00:16
I use Danish leeks.
0:00:19
But if you're in Thailand,
you can use Japanese spring onions.
0:00:23
I also have elephant garlic.
0:00:25
You can use any garlic,
but it's what I had.
0:00:28
This here is ginger.
0:00:29
It looks small because it's organic.
0:00:31
And an apple.
0:00:33
I'll chop these first.
0:00:45
I'm only using this much.
0:00:50
That's it.
0:00:52
Now cut the apple.
0:01:02
I'm going to cook these in soy sauce.
0:01:06
Let's get our sauce marinade ready.
0:01:11
This is Asian Kitchen's soy sauce.
0:01:14
I'm using it because
it smells like Kikkoman's.
0:01:19
It also has a dark color.
0:01:21
Add all of the 250 ml.
0:01:31
Then add 500 ml. of water.
0:01:37
I tried a 50-50 ratio, but it's too strong.
0:01:43
So I doubled the amount of water.
0:01:46
That's 250 ml. of soy sauce
and 500ml. of water.
0:01:55
Sugar. 3 tablespoons.
0:02:03
Add the veggies in.
0:02:21
2 tablespoons of mirin.
0:02:24
It's slightly sweet.
0:02:29
This stove has 9 settings,
I'll use number 3.
0:02:33
Cook this for 5 minutes
or until the veggies are cooked.
0:02:40
The sauce will be
sweet from the veggies
0:02:42
and fragrant from the
garlic and ginger.
0:02:45
It's been 5 minutes and
we turn off the stove.
0:02:49
Let it cool down.
0:02:51
I'll marinate the salmon with it.
0:02:56
Chop the chilies.
0:02:58
I'll add them to the salmon later.
0:03:09
That's it.
0:03:10
Now chop the garlic.
0:03:15
I also have toasted sesame
seeds here.
0:03:18
I'll add these too.
0:03:33
Marinate for 3 hours.
0:03:35
Coriander root, chili, and garlic.
0:03:37
Blend all of these together.
0:03:51
I don't have coriander root,
so I use stem instead.
0:03:56
Lemon.
0:04:16
Let's season it.
0:04:19
Welcome to Gin Pai Thai Rang!
0:04:22
How are you today?
Hello, everybody!
0:04:25
Today we're learning how to
make my pla ra seafood sauce,
0:04:28
since many of you asked.
0:04:30
I once ate this sauce with salmon and Tako.
0:04:34
Let's do it!
0:04:37
This is the chili that I blended with lemon.
0:04:41
Let's see how I make it.
0:04:44
I don't want to talk much
0:04:46
because it'd be too long.
0:04:51
Also, thanks for all your comments.
0:04:54
Let's do this.
0:05:01
Add some MSG.
0:05:09
2 tablespoons of fish sauce.
0:05:14
It's less fish sauce
than lemon juice.
0:05:18
If you use 3 lemons,
add only 2 of fish sauce.
0:05:22
I'll add more lemon,
so it'll be 1 and a half lemons.
0:05:33
This is a new pla ra sauce.
From "Monkey with Mortar".
0:05:40
It has a really strong flavor.
0:05:45
You can add as much as you like.
0:05:46
I added 2 tablespoons.
0:05:50
I don't like it too salty.
0:05:55
This tamarind juice
will make it sour.
0:06:03
5 teaspoons.
0:06:05
Or about 2 tablespoons.
0:06:09
Syrup.
0:06:14
I'll try 1 tablespoon first.
0:06:22
Sriracha chili sauce.
0:06:27
That's it.
0:06:31
I think it's done now.
0:06:37
Some chili powder for a nice color.
0:06:42
To get that bright red color.
0:06:44
Actually, it's ground chili,
not powder.
0:06:53
Taste time!
0:07:00
Tasty!
0:07:01
Needs sweetness.
0:07:03
It should be a bit more sweet.
0:07:14
That's Danish syrup.
0:07:23
Time to eat!
0:07:30
So nice!
0:07:32
Look. The color is nice.
0:07:35
The color is... Wow!
0:07:43
I'll keep the rest.
0:07:44
This one's so big.
0:07:50
So, let's get started!
0:07:52
I have grilled crispy seaweed here.
0:07:59
I finished the sauce
with some tomatoes.
0:08:06
Pour it on the raw salmon.
0:08:10
This one isn't marinated.
0:08:13
For those that said,
"Yai, the fish sauce recipe!"
0:08:19
Now we sprinkle!
0:08:26
Sprinkle!
0:08:29
Let's eat!
0:08:32
This is tuna.
0:08:37
It's 1,250 baht a kilo.
0:08:41
Cut it into slices.
0:08:43
Actually, I don't know how to do it.
0:08:45
Let's do it this way.
0:08:46
Cut into 30-gram slices.
0:08:49
Maybe 32 grams?
0:08:52
This knife is so sharp.
0:08:59
Looks like beef, right?
0:09:05
This is wasabi mixed
with soy sauce and shoyu.
0:09:22
Radish.
0:09:38
Tasty!
0:10:17
This is white radish.
0:10:48
Very tender.
No fishy smell.
0:10:57
It's really amazing.
0:11:14
I can't stop eating.
0:11:25
Yummy.
0:11:38
I love it because there's
no fishy smell as I expected.
0:11:45
I really can't stop.
0:11:47
May I use my hands?
I'm not Japanese.
0:12:19
Tender.
0:12:31
If I close my eyes,
0:12:34
I wouldn't know there's
fish in front of me.
0:12:38
So fresh!
0:13:12
I'll eat with this sauce.
0:14:04
When compared ...
