학교 앞 최애메뉴 제육덮밥을 만들어봤어요.
자취생 필수 요리이자 혼밥의 최고봉이죠.
값도 싸고 양 많았던 그때 제육덮밥을 재현해봤습니다.

🧑🍳 기본 재료
돼지고기 앞다리살 (제육용): 400g
맛술: 2스푼
대파: 1/2대
양파: 1/3개
청양고추: 1개
양념장 재료
고춧가루: 2큰술
다진 마늘: 1/2스푼
된장: 1/3스푼
간장: 1스푼
고추장: 크게 1스푼
물엿: 1스푼
물: 약간
소금: 2꼬집
(선택) 설탕: 취향껏 (단맛 추가용)
고명 및 차림
밥, 계란 프라이 (체다 치즈 선택), 통깨
⏱ 시간대별 레시피
[00:16] 고기 밑간하기
팬에 제육용 앞다리살 400g을 담고 맛술 2스푼을 넣어 버무려 둡니다.
[00:22] 채소 손질하기
대파 1/2대, 양파 1/3개, 청양고추 1개를 어슷썰기로 준비합니다.
[00:30] 양념장 만들기 (1)
볼에 썰어둔 청양고추, 고춧가루 2큰술, 다진 마늘 1/2스푼, 된장 1/3스푼을 넣습니다.
[00:35] 양념장 만들기 (2)
간장 1스푼과 고추장 크게 1스푼을 추가해 섞어줍니다.
[00:42] 양념장 농도 및 단맛 맞추기
물엿 1스푼과 물 약간을 넣어 잘 풀면서 섞어줍니다. (단맛을 원하면 설탕을 추가합니다.)
[00:48] 양념장 마무리
소금 2꼬집을 넣어 간을 맞추면 양념장이 완성됩니다.
[00:52] 고기 익히기
맛술에 버무려둔 고기를 불에 올려 한김 익혀줍니다.
[00:56] 양념장 볶기
고기가 중간 정도 익으면 양념장을 넣고 함께 볶아줍니다. (양념이 뻑뻑하면 물을 약간 넣어줍니다.)
[01:03] 채소 넣고 완성하기
썰어둔 대파와 양파를 넣고 양념이 잘 베어들도록 볶아줍니다.
[01:17] 담아내기
완성된 제육을 밥 위에 얹고, 취향에 따라 계란 프라이나 치즈, 통깨를 올려 마무리합니다.

🛒 Ingredients
Main Ingredients:
Pork front leg (thinly sliced for Jeyuk): 400g
Cooking wine (mirin / mat-sul): 2 tbsp
Green onion: 1/2 stalk
Onion: 1/3
Cheongyang chili pepper (Korean spicy green chili): 1
Sauce Ingredients:
Gochugaru (Korean red chili powder): 2 tbsp
Minced garlic: 1/2 tbsp
Doenjang (Korean soybean paste): 1/3 tbsp
Soy sauce: 1 tbsp
Gochujang (Korean red chili paste): 1 generous tbsp
Rice syrup (mul-yeot): 1 tbsp
Water: A splash (as needed to loosen the sauce)
Salt: 2 pinches
(Optional) Sugar: To taste (if you prefer extra sweetness)
Garnish & Serving:
Cooked white rice
Fried egg (optional: topped with cheddar cheese)
Toasted sesame seeds
⏱️ Recipe Step-by-Step
[00:16] Tenderizing the Meat
Place 400g of sliced pork front leg into a pan and coat it thoroughly with 2 tablespoons of cooking wine.
[00:22] Preparing Vegetables
Diagonally slice 1/2 stalk of green onion, 1/3 of an onion, and 1 Cheongyang chili pepper.
[00:30] Mixing Sauce (Part 1)
In a mixing bowl, combine the sliced chili, 2 tablespoons of Gochugaru, 1/2 tablespoon of minced garlic, and 1/3 tablespoon of Doenjang.
[00:35] Mixing Sauce (Part 2)
Add 1 tablespoon of soy sauce and 1 generous tablespoon of Gochujang to the bowl.
[00:42] Adjusting Sauce Consistency & Sweetness
Pour in 1 tablespoon of rice syrup and a small splash of water to smooth out the sauce. (Add sugar if you prefer a sweeter taste.)
[00:48] Finishing the Sauce
Season with 2 pinches of salt and mix until well combined.
[00:52] Pre-cooking the Pork
Turn on the heat and lightly stir-fry the marinated pork until partially cooked.
[00:56] Stir-frying Pork with Sauce
Once the pork is half-cooked, pour in the sauce and stir-fry together. (If the mixture gets too thick, add a small splash of water.)
[01:03] Adding Vegetables
Add the sliced green onions and onions to the pan. Stir-fry over high heat until the vegetables are cooked and well integrated with the spicy sauce.
[01:17] Serving Option 1 (Plate Style)
Serve the spicy pork on a plate and sprinkle toasted sesame seeds on top.
[01:23] Serving Option 2 (Rice Bowl / Deopbap Style)
Place a portion of cooked white rice in a bowl, top with Jeyuk stir-fry, and crown with a fried egg (optionally melted with cheddar cheese).
