Thanksgiving Collab - Apple Cake

Apple Cake Ingredients: 3 1/2 cups apples, peeled & diced small 2 cups self rising flour 2 cups sugar 3 lg. eggs 3/4 cup vegetable oil 1 tsp vanilla flavoring Dash or two of cinnamon (chopped walnuts, optional) Directions: Preheat oven to 350* In large bowl, combine sugar, eggs, cinnamon and vanilla. Mix well. Stir in flour adding one cup at a time. Dough will be slightly stiff. Stir in diced apples. Pour into greased/floured bundt pan. Bake 40-50 minutes @ 350* until top is nice and golden brown. Special Note: You will want to use apples that are slightly sweet and slightly tart. Granny Smith apples are too tart for this recipe.
